Chinese Lemon Chicken


Before I started this blog I made orange chicken and it was yummy. I love citrus flavors so I had to give this one a try as well. I am so glad that I tried it because it was really yummy!!!


I forgot to take a picture of my ingredients but here's what you use:
~ 4 bonesless, skinless chicken breast
~1/2 cup of flour
~ 1 T kosher salt
~ 6 oz. (half of the can) frozen lemonade concentrate, thawed
~ 3 T brown sugar
~ 1 t balsamic vinegar
~ 3 T ketchup
~ olive oil for browning the chicken

Directions:
~ cut chicken into strips or largish chunks
~ dredge in flour and shake off the excess
~ brown the chicken with a bit of olive oil (you are not cooking the chicken~ just giving it some color and getting the flour to stick to the chicken)
~ place into the crockpot
~ mix the rest of the ingredients in a seperate bowl and pour over the chicken

Cooking times:
~ high for four hours
~ Low for 6-8 hours
(I cooked mine on high)

Verdict:
YUMMY! this chicken is delicious. the flavors of all the ingreidents really come together to make a nice taste. we had no left overs so Brandon will nto take this for lunch tomorrow (he usually has the left overs from the previous night's meal..hahaha). def. will have to remember this receipe after I make all the other slow cooker meals i want to try out!

Menu:
~ chicken
~ rice
~ brocoli
~ salad

Layered Dinner




I saw this receipe and thought that it was interesting. I could put everything in my slow cooker: meats & sides. I was pretty happy about that: cook while at work and come home and just throw the food on a plate :)
Below are the ingredients that I used. However, you can use whatever meats and vegetables that you please.

Ingredients:
~ 1 1/2 lbs. rib eye steak
~ 1 T of your favorite seasoning rub
~ 1 T dried onion flakes
~2 T Worcestershire sauce
~ 1/4 cup of tequilla
~2-4 potatoes
~ 2-4 ears of corn
~ aluminum foil

Directions:
~ Put the meat at the bottom of the crock pot. Rub both sides of the meat with seasoning rub. Add the worcestershire sauce and tequila.
~ Wash the potatoes and fold into the foil. Shuck the corn and also wrap into the foil. Add to the crock pot.
~ It doesnt matter if the corn or the potatoes are on top, just make sure the beef is on the bottom of the crock pot.

Cook times:
~Cook on high for 5-7 hours or on low for 8 hours. I cooked mine on low.

How did the meal go over?
~ the meat was very tender and as you can tell from the picture had fallen apart by the time i had taken it out of the crock pot. Still, the meat was fantastic. Between the seasoning rub, dried onion, the sauce and tequila, the flavor of the steak was fantastic. The potato was good as well. I always have to add some butter and cheese to mine. I was not happy with the way the corn turned out. It really dried out in the crock pot and wound happening to open a can of corn to eat. The meal was tasty, but like I said, the corn on the cob did not work out for me at all!!! I will try this meal again though. The meat was really tasty.

Menu for the night:
~ Rib eye steak
~ Potatoes
~ Corn on the cob (well, canned corn)
~ Green beans
~ Salad

Mini Burgers

So for christmas I got a slider burger maker. I used it for dinner tonight and the machine is really easy to use and made yummy burgers.
I have no pictures of dinner tonight b/c I was running late on cooking and was more hungry thaan in a picture mood. Haha! So here's our menu;
Mini burgers with the following toppings:
whole wheat burger buns
pickles
cheese
Ketchup

Sides included:
salad
french fries
macaroni and cheese

Brandon had hamburger tonight. He hasnt seemed to interested in the food before but tonight chowed it down. It was a good dinner had by all. Tomorrow I'll be back to a slow cooker meal.

Just a little FYI

I wanted to let all you readers know that you will only see three meals a week....slow cooker or not. I'm a lucky gal..I dont cook from Friday to Monday night! A new recipe or meal idea will be posted on Tuesdays :)

A non-slow cooker meal


I do love my slow cooker, but today's meal is a non slow cooker meal.

Just wanted to share to give any readers out there other ideas for dinner.


Tonight's menu:
~ Lime shrimp (for the boys)
~ chicken cordon bleu (for me)
~ green beans
~ corn
~ salad
~ Olive Oil & Herb Angel hair pasta (from the box)

Simple meal, but still yummy!

John McCain Ribs












Okay~ to start off, I did not cook this meal based on it's political name. Just saw the recipe..thought it sounded good and gave it a shot. hahaha!
These ribs were super easy to prepare and make. They were also pretty delicious.

Ingredients:
4 lbs. rib
2T of garlic powder
2T kosher salt
3 lemons, juiced


Directions:
Cut the ribs to fit into your crock pot.
In a small bowl, combine and mix the dry spices.
Rub the dry spice mixure on all sides of the rack of ribs.
Put the ribs into your crock pot.
If you have extra spices, pour them on top.
Squeeze the lemon juice on top of the ribs
Cover and cook.
Low temperature~ 7 to 10 hours
High temperature~ about 5 hours
(note: the meat will be more tender if you cook it on low)

How well did this meal go over?
Well, there were no ribs left over from this meal :) I cooked mine for 10 hours, so they were just finishing up when I got home from work. The meat was falling off the bone! The meat was soo tender and juicy. The spices on it gave it a nice taste, it was not over powering at all.

Super easy and delicious meal.

I served mine with macaroni and cheese, green beans, corn, and a salad.

Buffalo Chicken Lasgna
















So, tonight we all had a try at Buffalo Chicken Lasagna. I actually prepped this on Monday in the slow cooker so it would be already to go on Tuesday morning (before I went to work). I thought that this sounded like such a neat receipe. I love pasta and I love buffalo chicken wings. Two of my favorite foods combined in one, I knew I had to try it.

Ingredients:
~ uncooked lasagna noodles
~ 4 precooked chicken breasts
~ jar of prepared pasta sauce
~ 1 cup buffalo wing sauce
~ tub of ricotta cheese (15 oz.)
~ package of shredded mozzerella cheese
~ 1/4 cup of water (to add at the very end)

You can also use the following ingredients (I did not add them to mine as Im not a big fan of either):
~ 3 red, yellow,or orange bell peppers (not a fan of cooked peppers so I left these out)
~ 1/2 cup of bleu cheese crumbles

Directions:
Use at least a 5 qt. crockpot (or cut back on the ingredients)

In a large glass bowl, combine cooked and chopped chicken breast, pasta sauce, and 1 cup of buffalo sauce.

Ladle a big spoonful of the sauce into the bottom of your crockpot. Cover with a layer of uncooked lasagana noodles.

Add ricotta cheese to the top of the noodles. If desired, add a handful of the bell peppers. In addition, add a handful of the mozzerlla cheese.

Repeat the layers until your run out of the ingredients.

If desired, add the 1/4 cup of the bleu cheese. In the empty pasta jar, add 1/4 cup water, shake, and pour the liquid of the entire top of the lasgana.

Cover and cook.
Low setting~ 6 to 7 hourse
High setting~ 4-5 hours

I cooked mine for 4.5 on high and it seemed to cook enough in my crockpot.


So, how did the meal fair with my family?

We all seemed to love it. Everyone had a big plate of it and it was all eatten up. The spice of the buffalo sauce really comes through the pasta sauce. It was a nice change from the traditional lasgana and will be added to our cooking rotation.
